Making homemade brushwood requires some culinary skill, but many novice housewives manage to make tasty and appetizing curls the first time. Even if the first experiment is not crowned with 100% success, do not despair: the second time you will almost certainly get the brushwood that you hope to get, that is, golden, crispy, and tasty. Knowing some subtleties will make the task easier.

  • To obtain crispy products, mineral water or alcoholic drinks are added to the dough. Sour cream, kefir, and cottage cheese allow you to make more tender, but slightly less crunchy cookies. Choose a dessert recipe in accordance with the result you intend to get.
  • The dough for making brushwood is rolled out thinly so that it is fried as quickly as possible, and folded in a special way. Usually, to do this, a layer of dough is cut into rectangles or diamonds, a longitudinal cut is made in the center, the ends of the dough are threaded into it and it is as if it is turned inside out. Other options are also possible. For example, a square piece of dough can be cut from the corners and one corner of the resulting triangles can be glued to the center. Another option is to cut the dough into strips and roll them into loose spirals. More more options gives the use of cookie cutters.
  • It is necessary to fry the brushwood in a large amount of preheated oil, each time removing the fried pieces of dough that have fallen off the brushwood. If a lot of products are fried, it is advisable to change the oil periodically. The quality of the oil also matters. Preference is given to refined vegetable products and always fresh, without rancid odor.
  • After frying, the brushwood must be placed on a napkin so that it absorbs excess fat.

Before serving, brushwood is often sprinkled with powdered sugar, honey or condensed milk. It is not advisable to process products with liquid products immediately after cooking, otherwise the brushwood may soften and stop crunching.

However, the dough ingredients for Khvorost are not the most important thing. To bake brushwood you need a special mold. Molds (in the form of butterflies, flowers, etc., approximately 5-7 cm in diameter) are screwed onto a long rod slightly curved at the bottom. First, you need to heat the mold in vegetable oil (deep frying), then immerse 2/3 of the mold in the dough (the mold is already heated in the oil and the cold dough just sticks to it) and dip into boiling oil. Hold until golden brown, remove and lightly pry with a knife so that the “Brushwood” separates from the mold.

If you cook Khvorost this way, it will be thin and crispy. It tastes even better if you sprinkle it with powdered sugar (I also mix it with cinnamon - mine loves it very much).
Khrustiki

"Brushwood"

For this dish we need...
- 1 glass of sour cream (200 gr.) It is better to take 30% fat, or add melted, butter, gram 50.
-2 cups of flour (in the photo I showed one cup).
- 30 grams of butter (I like it thicker, but if you’re counting calories, you don’t have to add it).
- 2 eggs. (Some recipes call for 2 yolks and 1 white, but I didn’t bother)
- a teaspoon of sugar (heaped)
- a teaspoon of vanilla sugar.
- half a teaspoon of salt. (During the cooking process, I added another pinch. I love the contrast of sugar and salt. But, this is already a gag.)
- half a teaspoon of baking soda.
- 2-3 tablespoons of brandy (in some recipes they add vodka or write that they add cognac, although they know very well that they themselves add brandy). Well, don’t be angry that I showed the whole bottle in the photo. During the cooking process, you can, very successfully, knock over a couple of glasses.
— Vegetable oil for frying. It took me about half a liter, even a little more. I just don't like frying many batches in the same oil. After one or two fried batches, I pour the boiling oil out of a dry mug, and throw out the remaining flour, etc. I wash the pan and add the used oil again if it has not yet browned too much. You can dilute it fresh. But! After 3-4 batches, the oil needs to be CHANGED! There is no need to spare $1 in the name of saving on the taste of the entire dish.
- Powdered sugar, for sprinkling on the finished twigs.

Pour the flour into a deep, dry container (bowl), and evenly pour the baking soda into it. Mix everything thoroughly. Place sour cream in another bowl, beat in 2 eggs, stir until smooth, add sugar, vanilla (or vanilla sugar), salt and 30 grams of melted butter. Add 3 tablespoons of brandy and mix everything thoroughly again. Then, gradually add flour into the container with the sour cream mixture, stirring constantly, that is, we don’t need lumps of flour. When all the flour is more or less mixed in the sour cream mass, check the dough. The test is simple - stick your finger into the dough and pull it out. If the dough sticks to your finger, you need to add more flour. Knead the dough with your hands, like making pies. When it finishes sticking to the palms, and when pierced it does not stick to the finger, it means that it is ready.
Leave the dough for half an hour to settle and soak in all the flavors.
We drink a glass of brandy and continue.
We tear off a lump of 7 centimeters from the entire piece of dough and roll it out with a rolling pin (damn, I forgot what this tool is called. Like a rolling pin?) damn it, 1-1.5 mm thick. Don’t forget to sprinkle the rolling area with flour, so it won’t stick.
Using a sharp knife, cut the rolled out pancake into strips 2 cm by 7-8 cm and make a cut in their center, exactly in the middle. Then, using our hands, carefully, without tearing the strip, we screw one end through the slot and thereby form a “spiral” product. Crap! Well, how else can I describe this? In general, everything is visible in the photograph.

Pour vegetable oil (sunflower) into the frying pan. The oil layer should be about 2-3 centimeters. The task is to dip all the pieces entirely. You can also fry it in a deep fryer.
Through experience, I realized that it is better to fry over higher heat, but for less time. Then the vegetable oil will not have time to completely saturate the cookie and it will be more tasty.
I fried one batch for about 30 seconds.

Dump the fried batch of twigs onto a napkin, which will absorb excess fat. Cover the top new napkin, onto which we dump the next batch. Place the finished “brushwood” on a dish, sprinkle each row generously with powdered sugar and...... Well, enjoy!

Pieces of light crispy fried dough sprinkled with powdered sugar - this is brushwood. In the step-by-step classic recipe, pieces of dough can be cut into thick or thin strips, triangles, diamonds or curls. Therefore, everyone chooses the form for this delicacy according to their own taste. This is a very high-calorie pastry that should be consumed carefully if you care about your figure. But surely no one will refuse a couple of pieces of crispy and aromatic brushwood, which is perfect for morning tea without any other additives.

Brushwood: classic recipe (step by step) - general principles of preparation

The dough for brushwood is mixed with water, milk, kefir or sour cream. Be sure to add egg, salt, sugar and flour to the dough. The finished dense dough is removed for a while to infuse, and then rolled out to a thickness of about 1 mm.

To fry brushwood, a large amount of vegetable oil is used, in which, floating, the pieces of brushwood are fried. If the dough is prepared correctly, the brushwood in the oil will sizzle during cooking.

The finished brushwood should be immediately moved to paper napkins so that they remove excess fat. Then the dish, while it is hot, should be transferred to a plate. Hot brushwood in the classic step-by-step recipe can be decorated with powdered sugar, ground walnuts or pistachios, condensed milk or ground red pepper to your own taste.

Vodka-based brushwood: a step-by-step classic recipe

Ingredients:

Three chicken eggs;

1 g vanilla sugar;

50 ml vodka (can be replaced with rum or table white wine);

200 ml vegetable oil;

150 g powdered sugar;

A pinch of salt.

Cooking method:

1. Break the eggs into a bowl and beat a little with a whisk until smooth.

2. Add vodka, vanilla sugar and salt to the bowl. Beat again with a whisk or mixer.

3. Sift the wheat flour directly into the bowl with the rest of the products.

4. Knead the dough with your hands; to do this, you can dump the mixture on the table. It shouldn't stick too much to your hands.

5. Cut the dough into 2-3 parts for ease of rolling.

6. Using a rolling pin, roll out pieces of dough one by one on the table to a thickness of 1-2 mm. If during rolling the dough sticks to the surface, then you need to add flour.

7. Now, using a regular or figured knife, you need to cut the dough into diamonds.

8. In the center of each diamond, make a small cut into which you need to insert and stretch the sharp side of the diamond. Do the same with all the diamond-shaped brushwood blanks of the classic recipe.

9. Step-by-step preparation continues by heating the vegetable oil. To do this, you need to pour it into a saucepan or saucepan and heat it well to a boil over moderate heat on the stove.

10. Place the brushwood pieces one at a time in hot oil and deep-fry until golden brown on all sides. By the way, you can use a household deep fryer for frying, if you have one at home.

11. The oil should begin to actively sizzle upon contact with the dough. Only in this case will the brushwood be crispy.

12. Fry all the brushwood one by one.

13. At the same time, you need to prepare paper towels. Place fried brushwood on them for a few minutes to remove excess fat.

14. Then place the brushwood on a plate prepared for serving.

15. Sprinkle with powdered sugar. For uniform sprinkling, you can use a small iron sieve.

16. It is better to serve brushwood to the table right away, while it is still crunchy.

Brushwood (Tatar curls): classic step-by-step recipe

Ingredients:

300 g wheat flour premium;

150 g of cool boiled water;

Two chicken eggs;

100 g granulated sugar or powdered sugar;

A pinch of salt;

400-500 ml vegetable oil;

150 g of flower honey.

Cooking method:

1. Pour cool water into a mixing bowl and add eggs.

2. Mix with a whisk until almost homogeneous, but not to a fluffy foam.

3. Add salt and sugar.

4. Beat with a whisk or mixer until the mass has a homogeneous structure.

5. Sift the wheat flour through a sieve onto the table and make a well in the center with your hand.

6. Pour the contents of the bowl into the well.

7. Use your palms to pour flour from the edges into the center of the depression, starting to knead.

8. Now, pressing inside palms on the dough, knead it until elastic. The dough should not spread in your hands.

9. Place it in plastic bag for 20-30 minutes. It will “ripen” and the sticky qualities of the flour will be more pronounced.

10. Then take the dough out of the bag and divide it into two or three parts.

11. Roll out all the pieces of dough one at a time into thin layers (1-2 mm thick) and place on the table. They should dry out a little.

12. Cut the dough with a regular or special shaped knife (the cut line should be wavy) into strips of 2 cm and a length of approximately 15-20 cm.

13. Then you will need a wooden stick with a base diameter of about 2 cm. It can serve as a narrow part of a wooden rolling pin or a whisk holder. The main criterion is that the stick is made of wood.

14. In the meantime, you need to prepare the deep fat. Pour the oil into the pan and heat almost to boiling point. By the way, the amount of oil is affected by the width of the deep-frying bowl or saucepan. If the bowl is quite wide, you will need more oil than indicated in the ingredients list.

16. Dip the spiral on a stick into boiling oil and carefully remove the stick.

17. The entire spiral should remain fried in the oil.

18. If the deep frying bowl is wide enough, you can fry several of these spiral twigs at once.

19. Fry all the strips of dough using the indicated method.

20. Then place paper napkins on the table in several layers and place brushwood on them to degrease.

21. Place the brushwood on a wide dish and generously pour in liquid flower honey.

22. This treat can be served even cold.

From all the ingredients received, I knead the mixture directly in the bowl with my hands. brushwood dough. I place the resulting dough from the bowl onto the table. To prevent the dough from sticking to the table when rolling, you can lightly dust it with flour.

Using a rolling pin, I roll out a layer of dough 3–4 millimeters thick and cut it into strips 2–3 centimeters wide and 10–12 centimeters long. In the middle of each strip I make a longitudinal cut with a knife.

Then I turn each strip inside out through the cut made in it, passing one of the ends of the strip through it.

I put a deep frying pan on the stove and pour 0.4 liters of sunflower oil into it. When the oil warms up well and begins to boil, I lower the prepared strips of brushwood into it, 3 to 4 pieces at a time.

Fry the brushwood in oil until golden brown.

Recipe for making brushwood “Fragrant”

Ingredients for making Khvorost cookies:

  • 1 glass of sour cream,
  • 2 eggs,
  • 2 tbsp. spoons of granulated sugar,
  • 2 tbsp. spoons of balm,
  • butter the size of a walnut,
  • flour,
  • vegetable oil for frying.

Preparing “Khvorost” cookies:

  • Grind the egg with granulated sugar in a saucepan.
  • Add balm. Mix. The balm gives flavor to the dough. Therefore, other seasonings (vanilla, cinnamon, etc.) will be superfluous here.
  • Mash the butter on a plate with a fork and place in a saucepan. Mix. The butter should be soft, but not melted.
  • Add sour cream. And mix everything again.
  • We begin to gradually introduce flour, stirring constantly.
  • The dough becomes more and more thick.
  • When the dough becomes elastic and can be kneaded with your hands, go to the table and knead the dough on the table.
  • As soon as the dough stops sticking to your hands, you can roll it out. Divide the dough into two or three parts (depending on how much space you have on your table) and roll out thinly from about 0.3-0.4 cm to 0.5-0.6 cm.
  • We cut the dough into rectangles and make a cut in the center of each rectangle for molding. It is not necessary to measure out rectangles: this is what home baking is all about, that there is nothing stamped and everything is done conscientiously and with soul, as they say.
  • We form brushwood.
  • On one side, we wrap the ends of the rectangle inside the cut (down), and on the other side, we turn it inside out. This is usually how brushwood is shaped, which is why this delicacy looks like brushwood. Although you can use your imagination. If the dough breaks, you can tie it with a weak knot: it will also look interesting.

  • In heated oil (there should be enough oil so that the brushwood can be completely immersed) we lower the brushwood blanks.
  • As soon as they are browned, turn them over to the other side.
  • When the second side turns brown, remove it.
  • The brushwood is ready. It gives off such a wonderful herbal-spicy aroma that you definitely want to try it!
