Let's start with the main ingredient. This is chicken fillet. If it is on the bone, you need to remove the meat so that you get a single piece. Then you need to beat it with a hammer, placing it in polyethylene. This must be done super carefully so that there are no thin spots on the fillet. Otherwise the filling will fall out.


Step 1. Put the meat in plastic and beat it

Cheese is a unique product in this dish. First, it complements the chicken with its flavor. You could put nothing else here at all - it would be gorgeous! Secondly, it holds all the other ingredients together. That's why there is never too much of it. What's the best way to put it? I grated it on a coarse grater.

The next ingredient is very unusual. I rarely use sun-dried tomatoes at all. Because they need time - they must soften. That’s why this time I decided to cut them into very thin stripes.

Why are green onions here? What a question! It will add flavor and add freshness with its bright color. And green onions, especially in winter, even in this form, are a vitamin. And there’s never too much of it either! Let's tune it up a little.


Step 4. Finely chop the onion

This can be limited. But the more ingredients in the roll, the more satisfying, tastier and healthier it is. Therefore, let's trim the bell pepper too. Mine was yellow. It was such a nice accent!


Step 5. Bell pepper

Celery is a unique product. I'm talking about its stem type. Fragrant, healthy, delicious! In short, let's cut it into thin strips. This way it will cook faster and will not fall out of the roll.

That's all. You can collect the filling. Or you can place each ingredient in layers in the middle of the beaten fillet. What about salt? Everyone chooses their own path. I have aromatic salt - it will add a little salt and add flavor.

Ingredients

  • 250 g chicken meat
  • 50 g cheese
  • 1 small gherkin
  • 50 g green onions
  • A piece of butter

Preparation

Any part of a chicken carcass will do. If there is a leg, the meat is removed from the bone and beaten. The same situation with the breast. The filling with cheese is traditional. If you add, say, a gherkin to it, it will taste better. Chop the onions, gherkins and green onions, mix everything, put a piece of butter in the middle, and pack the roll in foil.   • 0.5 cups walnuts

  • To ensure that the filling remains in place, it is better to tie the roll with threads, kitchen twine, if available, or chop it with ordinary skewers.
  • You can roll large rolls - it’s easier, less fuss. Or maybe small ones. Here you will have to tinker with fillings and roasting.
  • There is another way of folding - put the larger part of the breast first, the smaller one in the middle, and the filling in the middle.

The main component of the recipes, of course, will be chicken, in any form - whole, legs, breast, boneless fillet, chicken offal. And additional ingredients will include cheese, spices, onions, mushrooms, eggs, as well as fruit and nut additives. Such rolls are incredibly beautiful when cut, multifaceted in taste and very unusual. There will also be several recipes that include gelatin in their composition, and this will make the rolls unusually strong and hold their shape remarkably well. The chicken fillet roll has a wonderful crispy crust, and inside there is a wonderful spicy filling of cheese and garlic. But the most important thing in the recipe is the sourness that prunes provide.

Ingredients:

  • Chicken breast fillet – 2 pcs.
  • Prunes – 50-70g.
  • Hard cheese – 100g.
  • Garlic – 3-4 cloves
  • Sour cream – 3 tbsp.
  • Chicken egg – 2 pcs.
  • Flour – 4 tbsp.
  • Paprika – 1 tsp.
  • Sesame – 2 tsp.
  • Breadcrumbs – 4 tbsp.
  • Greens (dill, parsley)

Let's start cooking with chicken. To do this, rinse the breast under water and dry it on a paper towel. Then, using a sharp knife, cut the breast into two halves as in the photo.

Then we beat each half with a hammer.

Add all the chopped pieces and season with black pepper, then put them aside.

While the chicken is marinating a little, prepare the filling. Grate the hard cheese on a coarse grater and transfer it to a bowl.

Pour boiling water over the prunes for 5 minutes, then cut into small pieces.

Chop the greens into small pieces. Pass the garlic through a press. Then we transfer everything to the cheese.

Add sour cream, add some salt and mix well.

Now let's move on to forming the rolls. Place the filling on a piece of fillet and spread evenly over the surface.

Roll the meat into a tight roll, it will turn out like a thick cutlet.

If you want to prevent the roll from unrolling, you can secure it with a toothpick. Roll up all the meat pieces in a similar manner.

In a bowl, mix breadcrumbs, paprika and sesame seeds. And in a nearby bowl, beat two chicken eggs with a pinch of salt with a fork and pour into a flat plate. And next to it we place a third plate with flour.

Place the mold in an oven preheated to 180 degrees for 30 minutes.

After baking, serve immediately and eat hot.

How to cook chicken roll with pistachios

A very tasty roll is obtained if you add pistachios to it. The pleasant nutty flavor pairs well with the flavors of chicken and bacon. Moreover, the dish is good both hot and cold.

Ingredients:

  • Chicken fillet – 500g.
  • Chicken yolks – 2 pcs.
  • Butter – 2 tbsp.
  • Milk – 100ml.
  • Flour – 2 tbsp.
  • Pistachios – 100g.
  • Bacon – 150g.
  • Salt, ground black pepper - to taste

We peel the pistachios and lightly fry them in a frying pan. If you already have them peeled and fried, you don’t need to do anything.

Cut the chicken fillet into pieces and pass it through a meat grinder with a medium rack and begin preparing the minced meat. To do this, melt two tablespoons of butter and send it to the rolled meat, drive in a couple of chicken eggs and mix. Then pour 100 ml of hot milk, add salt, pepper and mix again. After this, add two tablespoons of flour and pistachios. Stir until smooth.

Place the pieces of bacon in the baking dish at a slight angle so that the edge hangs slightly. As in the photo.

Place the minced meat on the bacon, distribute it evenly and wrap it with pieces of bacon on different sides, making it like a braid.

Place the mold in an oven preheated to 180 degrees for 40-50 minutes.

After the time has passed, remove the pan from the oven and transfer to a serving dish. Can be served hot or cold as a snack.

Chicken roll with mushrooms

One of the best tasting rolls is obtained if you add mushrooms to the chicken. But we went even further, mixed the mushrooms with cheese and added mustard. It turned out to be a very interesting spicy taste.

Ingredients:

  • Chicken fillet – 2 pcs. (breast)
  • Mushrooms – 159g (champignons)
  • Onions – 1 pc.
  • Sour cream – 1 tbsp.
  • Hard cheese – 50g.
  • Mustard beans – 1 tbsp.
  • Greens – 10g. (parsley)
  • Vegetable oil – 2 tbsp.
  • Salt, ground black pepper - to taste

In this recipe, we start by making a thick sauce for the chicken. To do this, mix mustard, salt, sour cream and ground black pepper in a bowl.

And then we move on to the meat. We cut the breast into two flat plates, but do not cut it all the way, leave about 1 cm uncut, then simply open the breast like a book and place it on the board.

Cover with cling film and beat with a hammer.

I repeat once again, do not beat it too hard; store-bought chickens have soft breast meat that very easily turns into minced meat. Village chickens are a different matter; you can beat them off even harder, it won’t hurt them. It is more convenient to beat through cling film, this way nothing will fly around the kitchen.

Lubricate the broken pieces with sauce on both sides and put them aside. While we prepare the filling, the meat will marinate a little.

Now let's prepare the filling. Cut the onion into small pieces and place in a frying pan heated with vegetable oil. Fry over medium heat until golden brown.

Cut the champignons into small cubes approximately 5mm in size.

Finely chop the greens. Grate the cheese on a medium grater.

As soon as the onion in the frying pan turns golden, add the mushrooms to it. Stirring, fry everything together until the liquid from the pan evaporates. This takes approximately 10 minutes. Maybe faster, it all depends on the intensity of the fire on your stove.

When the liquid has evaporated, the mushrooms will darken, at this time add grated cheese and herbs to the pan. We start stirring everything, wait for the cheese to melt and remove the pan from the heat. The filling is ready.

While we were preparing the filling, we marinated the chicken. We put it on the board, put the filling in the middle and wrap it in the form of a sausage. If there is not a lot of filling, you can wrap it in the form of a roll. We fasten the ends with toothpicks, just in case.

Carefully transfer to a baking dish and place in an oven preheated to 180 degrees for 25-30 minutes.

After the time has passed, remove the pan from the oven, cut the contents into portions and serve.

Delicious chicken roll with omelette

The next recipe is not as simple as the previous ones, but it has a lot to offer in terms of taste. The filling of a tender omelette, the spicy taste of garlic - all this leaves an unforgettable experience from a seemingly simple chicken dish.

Ingredients:

  • Chicken – 1 carcass
  • Chicken egg – 5 pcs.
  • Milk – 200ml.
  • Garlic – 4-5 cloves
  • Paprika – 1/2 tsp.
  • Salt, ground black pepper - to taste

We place the carcass back down on a cutting board and use a small sharp knife to cut the meat on the chest, and then separate all the bones from the meat, being careful not to damage the skin.

With a little skill, it takes about 10 minutes to remove all the bones, provided that the chicken is store-bought. The village one will have to work a little harder. Don’t be afraid to cut the meat somewhere, it’s not scary at all, the main thing is to try to leave the whole skin, it will hold everything in the roll.

We place the resulting layer of meat on a board, cutting off pieces of meat from one place, usually from the area of ​​the legs and chest, placing it where there is not enough of it, in the back and back area, distributing the meat evenly over the surface.

Cover with cling film and beat lightly with a hammer. Then salt and pepper the meat and distribute the garlic, passed through a press, over the surface. After this, move the chicken aside, and while we make the omelet, it will marinate a little.

Beat chicken eggs into a bowl and add a pinch of salt. Beat well with a fork and pour in 200 ml of warm milk. Beat again. Then pour the egg mixture onto a baking sheet greased with vegetable oil and place in the oven. Bake at 180 degrees for 10-15 minutes.

Transfer the resulting omelette to the chicken.

We wrap it in a roll.

Transfer to foil, shiny side up.

Sprinkle with paprika and wrap well in several layers of foil.

This will make the roll denser and cook in its own juices.

Place on a baking sheet and place in an oven preheated to 200 degrees for 60-70 minutes.

Remember the recipe for chicken roll with mushrooms at the top? Here's another recipe, just changed the ingredients a little. Try both options and choose the best one for you.

Ingredients:

  • Chicken breast – 2 pcs.
  • Mushrooms – 250g. (Champignon)
  • Hard cheese – 100g.
  • Seasoning for chicken – 1 tsp.
  • Salt, ground black pepper - to taste

Rinse the chicken breast with water and cut it lengthwise along a wide edge with a sharp knife. Do not cut the edges until about 1 cm, and open the breast like a book. It turns out to be a large flat piece of meat.

You can beat it without film, just knock carefully so that pieces of meat do not scatter around the kitchen.

In a bowl, mix salt, ground black pepper and chicken seasoning. Rub the resulting spices onto both sides of the chicken and leave for 20 minutes.

In the meantime, prepare the filling. Finely chop the mushrooms and onions. Place the onion in a frying pan with vegetable oil. Fry until golden brown. Then add the mushrooms, add some salt and pepper to taste and fry everything together for about 10 minutes over medium heat. After frying, transfer the mushrooms to a plate.

Grate the cheese on a coarse grater and transfer to the mushrooms. Stir until smooth. The filling is ready.

Spread the filling in an even layer on each piece of chicken, not reaching the edge by about 2cm.

And then we roll it into a tight roll and wrap it with cotton thread so that nothing unwinds, or we fasten the edge with toothpicks.

Just do not use lavsan threads or other synthetics, there is a risk that they will melt.

We wrap the prepared rolls in food foil and place them on a baking sheet. Place the baking sheet in an oven preheated to 180 degrees for 40 minutes.

After the time has passed, remove everything from the oven and let it cool. Remove the threads and serve.

Chicken roll with gelatin in cling film

With this recipe we open a whole series of recipes that contain gelatin. Thanks to gelatin, the cooking process is greatly simplified, and we can replace the rather expensive chicken breast with any other trimmed meat.

Ingredients:

  • Chicken fillet – 1 kg.
  • Garlic – 4-5 cloves
  • Salt – 2 tsp.
  • Gelatin – 25g.
  • Paprika – 1 tsp.
  • Ground black pepper, spices - to taste

So let's get started. Place the chicken pieces into a convenient bowl. Season with salt, pepper, paprika and any dry herbs, favorite spices, pressed garlic and dry gelatin. Mix thoroughly until smooth.

Line a cutting board with 3-4 layers of cling film. Then we transfer the prepared pieces of meat onto the film and wrap them in a sausage roll. We fasten the ends with thread.

Place the rolls in a saucepan with water and set to cook on the fire for 1.5 hours.

After cooking, cool completely, then remove the film and cut into pieces.

Ingredients:

  • Chicken fillet – 350g.
  • Chicken breast – 350g.
  • Garlic – 2 cloves
  • Paprika – 1 tbsp.
  • Gelatin – 25g.
  • Seasoning for chicken – 1 tsp.
  • Salt, ground black pepper - to taste

Rinse the chicken fillet and breast meat with water and then cut into pieces approximately 1cm in size. Transfer to a convenient container. Add a tablespoon of paprika and chicken seasoning, a teaspoon of salt and dry gelatin. Add garlic, passed through a press, and mix well.

Transfer the resulting mass into a baking sleeve. We shape it into a roll and secure the ends of the sleeve tightly.

To fix the shape of the roll more tightly, transfer the sleeve with meat to foil and wrap it several times.

A very tasty recipe for making rolls in foil

Very juicy and tender chicken fillet with a spicy, spicy filling. In this roll we combined almost everything possible and as a result we got an unusual taste. And the interesting look with the original texture will not leave anyone indifferent.

Ingredients:

  • Chicken breast – 4 pcs.
  • Canned corn – 1/2b.
  • Onions – 4 pcs.
  • Carrots – 1 pc.
  • Bell pepper – 1 pc.
  • Tomatoes – 1 pc.
  • Fresh ginger – 1 cm.

For the marinade:

  • Soy sauce – 3 tbsp.
  • Teriyaki sauce – 2 tbsp.
  • Garlic – 4 cloves
  • Salt, ground black pepper - to taste
  • Thyme, basil - a pinch

For the marinade, combine garlic, soy sauce, teriyaki sauce, and spices passed through a press. Mix everything well and set aside.

We cut the chicken breast along a wide edge, about 1 cm short of the end, and then open it like a book. Cut all the breasts this way. Then lightly beat each breast with a hammer and place the beaten pieces of meat on a board covered with cling film.

Coat with marinade and leave for 30 minutes to marinate.

Now let's prepare the filling. Cut the onion into thin half rings and place in a frying pan heated with vegetable oil. Fry over medium heat for about 2-3 minutes until slightly golden brown.

Finely chop the ginger and add to the onion. Mix everything well and fry until the onion is golden.

Cut the carrots into thin strips and, as soon as the onion turns golden, add the carrots to it. Stir and fry further.

If you don’t understand at what time interval to add vegetables, don’t worry, it’s not that important. Just chop the next product and immediately put it in the pan. The main thing for us is to make the vegetables softer than they are fresh. And also, when fried, they reveal their aroma.

Unlike previous recipes, we do not grate the cheese, but cut it into long pieces with a thickness of approximately 5 mm, as in the photo. For our recipe you will need 6-7 pieces of this kind.

  • Chicken fillet – 700-800g.
  • Carrots – 1 pc.
  • Onions – 2-3 pcs.
  • Garlic – 3 cloves
  • Seasoning for chicken – 1 tbsp.
  • Gelatin – 30g.
  • Vegetable oil - for frying
  • Bay leaf – 2 pcs.
  • Salt, ground black pepper - to taste

Chicken fillet, and these are pieces of meat, gizzards, hearts, in a word, everything you have in the house, put it in a cauldron or deep pan and pour a little water. Bring to a boil, skim off the foam, then reduce the heat and close the lid. Then simmer over low heat for 1.5 hours. About 15 minutes before the end of cooking, add salt and throw in a couple of bay leaves.

While the meat is stewing, dilute the gelatin in cold water, according to the instructions.

Finely chop the onion and place in a frying pan heated with vegetable oil. Fry until golden brown, then add grated carrots. Stir and fry until carrots are soft. Then remove the pan from the heat.

When the meat is cooked, remove it from the broth to cool, and then finely chop it. Strain the broth through a sieve.
